Eric is actually the one that takes Ryan to the hospital after a nail gets in his eye. It was quite ironic after the way the two related in previous episodes. That was probably what the writers were going for

Oh, I was told that Eric was mesisng with something and it flung back hit Ryan in the eye and he was totally p-sed at Eric for a while but w/e lol.

But I believe you're right, it's just a petname or nickname that her father gave her. Kind of like 'sweetie' or 'punkin'.

...because he had to strike a dramatic pose first! I think it was supposed to be deep and meaningful. He was looking for divine inspiration/forgiveness maybe? Which would be very hypocritical considering he was about to embark on a revenge mission.
Personally, I found it all rather pointless and over the top. We could have had a shot of the Christ The Redeemer statue without H in it at all, just to show off the stunning backdrop. I would have been happier with that, but oh well, this is Miami afterall.

I kinda figured since H is Catholic, and he was kneeling at the statue, that he was pre-atoning for the sin he was about to commit. And, it made for a killer helicopter circling shot.
