Pretty much everything that Sid says. That man is gold...my favourite quote from him is the infamous:
"He calls you that cause he's got a crush on you"
Also the little bowling exchange between Danny and Adam in 'Consequences'...that was hilarious. Loved Stella's face.

So many great quotes... I personally find that Flack and Sid are the two characters guaranteed to provide a great one liner or quote... 
Flack from Grand Master (I think): "Well forgive me if I allow your status as a multiple felon to color my opinion of you."
Sid from Hung Out to Dry: "The highest I've ever registered was 0.23, but that was in celebration of my first divorce. I fell down a flight of stairs, didn't feel a thing."

From 'The Closer.' I love this quote because it's such a great Mac-Moment and GS does it so well. Also, I really think it gives insight into how losing Claire on 9-11 has affected Mac and how it drives him in his work.

I also like the Mac-quote from the end of Manhattan Manhunt and the 'gooey' Stella/Mac quotes that DandMfan mentioned.

^^*giggles* I was watching that with a guy at work today and I said, "That's such a lie."
The conversation between Mac and Aiden at the end of today's episode (Grand Murder at Central Station) is one of my favourites. There's a lot of compassion there, and both Gary and Vanessa did an outstanding job.
