I think we should start with Season 1 episodes first and work our way through all the seasons so we see the growth he has had. So I think the Pilot would be fine to watch first and then Table Stakes. My opinions. I think once we get to season 2 there will be more and more choices as we go on.
 
I also think that we should start from begining, it would just make more sense to me. Though I've never really liked the Pilot that much, it's a little too clear that they were still searching their style, but all the Greg scenes were good. So yeah, I vote for the Pilot.
 
I agree with starting from the beginning and working our way up.

I've put together a list of episodes we could watch but I'm sure I've missed some so please feel free to suggest more!!!

Season One
1. Pilot (and subsequent episode) Not a lot of Greg in this one though.
2. Table Stakes

Season Two
Any ideas?

Season Three (there are a LOT of good Greg scenes in this Season!)
1. Abra Cadavar (for the Swami see all scene :lol:)
2. Chasing the Bus (which I suggest now that I think about it)
3. Precious Metal
4. Play with Fire

Season Four

Ideas?

Season Five
1. Viva Las Vegas
2. Who Shot Sherlock?
3. Big Middle (who can forget the mannequin!)
4. Spark of Life
5. Iced

Season Six
1. Shooting Stars
2. Gum Drops (I know it's not Greg centred but he's in it a lot right?)
3. Kiss-Kiss, Bye-Bye
4. Roshomama

Season Seven
1. Fannysmakin'
2. Post Mortem
3. Fallen Idols
4. Big Shots
5. Leapin'Lizards

Season Eight
1. A La Cart

Let's not forget Season 5's '4x4', 'Spellbound', 'Swap Meet', & 'No Humans Involved'
There's also that episode in Season 9 'Hog Heaven' where Greg will end up playing the victim in the scene's reconstruction. Plus there were quite a few Greg's moments in there.
For Season 10 there's 'Take My Life, Please!'

ETA: Forgot to add Season 3's 'Let The Seller Beware'. Oh, and what about 'Gum Drops'? Although it was mostly focused on Nick, but there were quite a few good Greg moments in there. And I suddenly remembered Season 4's 'Early Rollout'. =)

Chasing the bus is from season two... according to wikipedia (I had to look for the episodes... I suck at names)

I've got some more episodes -with nice Greg moments- to add to the list:

Season One

"To halve and to hold" (1x14) - That "dancing with the old vegas crown" scene

Season two

"Slaves of Las Vegas" (2x08) - that sharpies scene...-
"cats in the cradle" (2x20) -Could have been a rock star...-

Season four

"Early rollout" (one of his first times at the field)

Family Affair - started the whole Greg-angst thing.
Death and the Maiden - It was Greg who solved the case. Plus he talks to himself in it :lol:

Wow! Excellet suggestions! I've updated the list to include everyone's suggestions.

Over the summer, as we watch these I think we should keep in mind it's all casual and good fun and we can join in as we please. No one is forcing anyone to watch any of the episodes :D (I know some of them are really hard to watch...*coughFannysmackin'cough*!)

I'll add some too.

Season 1--Pledging Mr. Johnson, for his scene eating ice cream with Grissom and talking with Warrick.

Season 4, how about Eleven Angry Jurors? He was in that one a bit.

Season 6-Spellbound. I disagree on Shooting Stars, he really was not in that much overall.

Season 8- The case of the cross dressing carp-His love of Vegas and the mention of the book.
I also liked him in The Theory of Everything.

Season 9- No Way Out!
19 Down, he became a level 3
 
Oops. Thank you Dizzney. When I wrote 'Shooting Stars' I actually meant 'Bodies in Motion'. My bad!

I'll post a new list later today so more suggestions would be great!

Another one for Season Eight would be Grissom's Divine Comedy.
