I just watched an epiode, the one where Sara has the "Who's the punk now, bitch?" line, and in the beginning, Catherine suggests that they all pool their money and rent a nice house, she says "you know, me, you, Nick, Warrick, Grissom" and Sara sneers and says "Um, not Grissom"
She didn't say anything about whether she'd want to live with Nick.

With regards as to when Sara really understood Nick, I think it was probably in Bully For You, in that little lab scene between the two. The one where Sara throws up.
Why? You might ask. When she told him not to tell anyone and he said "about what?" she gave him this look, and I think it was the first time she REALLY seriously understood Nick. Like, she understood what kind of person he is, and that he wasn't going to humiliate her, because he's better then that.

NICK: Well, okay, if that works for you.
SARA: Be careful.
They know each other well enough to understand how they react in certain cases. I love it that they're watching out for each other.SARA: You go. I have something to do first.
NICK: (worried) Hey, if you go near that Thorpe kid...
(SARA turns around to look at NICK.)
SARA: Excuse me?
(NICK doesn't back down. He's still concerned.)
NICK: I'm just saying ...
SARA: (appreciative) It's something else. Promise.

SARA: I - I think I need to talk about what happened at the station.
NICK: Oh, yeah.
SARA: I'm slightly concerned about its effect on the case, but more than that I'm concerned about the case's effect on you, Nick, and I'm absolutely sure that six months ago, you wouldn't have lost it like that.
NICK: I know, I'm sorry. I apologize for that.
