It was Play With Fire that she asked him to dinner, after the lab got blown up.

I think she's always liked him - especially after what she said in Snakes:
SARA: You've always been more then a boss to me...why d'you think I came to Vegas?

Which makes me suspect that she's always had a crush on him but she really started to fall for him after they'd started working together.

It's really a matter of opinion when Sara started falling for Grissom, but that's what I think anyway. Hope that helped
